This is from Pooks and Molly, too! Pineapple Pig Pickin Cake . It is Tracy's favorite! A long time ago our mommy's mom made it and Tracy really loved it back then when she little. So every once in a while our mommy will make it. Ingredients For the cake: 1 box yellow cake mix 1 stick unsalted butter (1/2 cup) softened 1 (14 oz) can mandarin oranges drained, 1/2 cup juice reserved 4 large eggs 1 teaspoon vanilla extract For the topping: 1 (4 oz) box vanilla instant pudding mix 1 (20 oz) can crushed pineapple (juice reserved) ½ cup powdered sugar 4 ounces Cool Whip (half a regular tub) extra mandarin orange slices, for garnish Instructions Preheat oven to 350 degrees. a 9x13 baking dish with nonstick cooking . For the cake, combine cake mix, butter, 1/2 cup juice from the mandarin oranges, eggs, and vanilla. Beat for 3-4 minutes on medium-high. Add drained oranges and stir until combined. Pour batter into prepared baking dish and bake for about 20-25 minutes. Remove from oven and cool completely. Once cake is cool, blend juice from drained pineapples with the vanilla pudding mix. Stir in powdered sugar. Then mix in whipped topping. Finally, stir in drained pineapple. Spread frosting on cooled cake. Optional: Top with slices of mandarin oranges. It is easy to make and tastes so good!! (June 2018)

Here's an easy recipe mommy makes.
Ingredients One Rotisserie chicken About 16 ounces of green enchilada lauce 1 can sliced black olives 1 can diced green chilies 1 can cream of chicken or mushroom soup 12 corn tortillias shredded cheddar cheese (to taste....mommy likes a lot!)
Shred the chicken off the bone, mix with olives, chilies, enchilada sauce and cream soup. Tear six of the tortillas into a casserole dish. Top with half the chicken mixture, cover with cheddar cheese. Repeat. Bake at 375 degrees for 45 minutes.

Breakfast Loaf
Ingredients
6 large eggs 1/4 teaspoon salt 1/8 teaspoon pepper 1 tablespoon butter 1 round loaf (1 pound) French bread 6 ounces sliced deli ham, divided 3/4 cup shredded Monterey Jack cheese, divided 3/4 cup shredded cheddar cheese, divided 1/2 medium sweet red pepper, thinly sliced 1 medium tomato, thinly sliced
Directions
Preheat oven to 350°. Whisk together eggs, salt and pepper. In a large skillet, heat butter over medium heat. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Remove from heat. Cut one-fourth off top of bread loaf. Hollow out both parts, leaving a 1/2-in. shell (save removed bread for another use). Place a fourth of the ham in bread bottom; top with half of each of the cheeses. Layer with red pepper, scrambled eggs, tomato and the remaining cheeses and ham. Press layers gently; replace bread top. Wrap tightly in foil. Bake until heated through, 25-30 minutes. Let stand 10 minutes before cutting.

Angels Hershey & Winkie Here is the recipe for the Raspberry Soup momma made! Raspberry Soup 2 cups fresh raspberries 1/3 cup sugar 3/4 cup sour cream 3/4 cup dry red wine 1 1/2 cups cold water 1. Puree raspberries through a sieve or a food mill 2. Blend sugar and sour cream together and stir into raspberry puree. Stir in wine and water. 3. Chill thoroughly before serving. Mom thought the next time she makes it, she would cut back on the water so that it had a thicker consistency. The peeps really liked it, so it will get made again.

Holiday Gathering Hawaiian Ham and Cheese Sliders If holiday gatherings involve these Hawaiian Ham and Cheese Sliders then let's get the party started!! Prep Time 15 mins Cook Time 12 mins Total Time 27 mins Course: Sandwiches Servings: 12 sliders Author: Megan Ingredients 1 package Hawaiian sweet dinner rolls 12 rolls 1/3 cup mayo 6 slices Swiss cheese 8 slices deli ham about 3/4 pound 6 slices of the canned pineapple slices Sauce 4 tablespoons unsalted butter melted 1/2 tablespoon dijon mustard 1/2 teaspoon ground ginger 2 tablespoons coconut milk not canned 1 teaspoon poppy seeds 1/2 teaspoon coarse sea salt Instructions Preheat oven to 350℉. a 9x13 pan with non-stick cooking or olive oil and set aside. Place a sheet of parchment paper over cutting board. Cut entire package of rolls in half with bread knife without separating individual rolls. That way you have the top half of rolls still together and bottom half of rolls together. Spread mayo on bottom half section of rolls. Layer sliced cheese on top of the mayo. It's okay if cheese overlaps. Layer sliced ham over cheese. Next, layer the sliced pineapple over the ham. Place top half of rolls over the pineapple. With parchment paper to help transfer, carefully place sliders in greased pan. Make sauce as described below and pour over top of rolls enough to cover the tops. Do not have to use all of it. Bake sliders covered with foil for 10-12 minutes, remove foil and bake another 2-3 minutes until sliders are golden brown on top. Sauce Add melted butter to a medium bowl followed by remaining ingredients. Mix ingredients together with a whisk until combined.
